Cooking Demo Class Recipe: Fideo Soup

Once a month seniors at the Gary and Mary West Senior Wellness Center indulge in a special cooking demo class with easy to make recipes. Here is a definite crowd favorite that will be great to take to your next dinner party!



1 cup of Fideo or Angel hair pasta (Broken)

½ Lg. Anaheim Pepper, cut in 2 or 3 pieces

1-2 cloves of garlic, whole

¼ cup of chopped onion (any kind, but green)

1 small can of tomato sauce

1 Tbsp + 1 tsp Beef bouillon powder (1 tsp. per cup of water)



4 cups of water (more water can be added if more soup like is preferred)

Vegetable Oil

In a pot, bring to boil 4 cups of water, adding 1 tsp. of bouillon for each cup of liquid. While waiting for liquid to boil, add 2 tsp’s of vegetable oil to a soup pot on medium high. Add the fideo along with the onion, coarsely chopped, garlic and the Anaheim pepper. Saute all ingredients together, stirring frequently, until Fideo pasta has browned evenly through. Add tomato sauce & boiling liquid & stir ingredients together. Salt & pepper to taste. Once liquid begins to boil rapidly again, turn down to medium-low heat, cover with a lid & cook 12-14 minutes. Serve hot with corn muffins or any type of bread.
